There are times, more often than not it seems, when you just don't have the time to sit down and create a mouthwatering recipe from scratch. On those days you need something simple that you can throw together quickly that will still wow your friends and family. That's where this recipe comes in.
All you need is five ingredients (you can add a few toppings such as cheese, sour cream and avacado, but it isn't necessary) and you've got a fantastic meal that is ready in no time.
- 2 cans chili beans (in sauce)
- 1 can black beans
- 1 can Rotel
- 3 boneless, skinless chicken breasts
- Cattleman's Grill 8 Second Ride Carne Asada Rub
Step One
Preheat your oven to 450ºF. Alternatively, you can grill the chicken breast, the method is up to you. Using a sharp knife, trim away the fat on the chicken breast. Place the chicken on an oiled lipped baking sheet, dry them with a paper towel and season them generously with Cattleman's Grill 8 Second Ride Carne Asada Rub. Roast the chicken in the oven for 15 minutes or until the chicken reaches 160ºF internal temperature.
Step Two
While the chicken is roasting, simply dump the chili beans, black beans and Rotel into a sauce pan. Place the sauce pan on your stove over medium heat. Stir the ingredients together and wait for the mixture to come to a slow boil. Turn the burner down to a simmer.
Step Three
Once the chicken has reached 160ºF internal temperature, shred it using a fork or your fingers and drop it into the been and tomato mixture. This chili is perfect on its own or you can serve it over rice, on a baked potato or however you would like. Garnish with cheese, sour cream, diced Avocado if desired.
